Tomato and Pesto Pizza by Alicia

Made this homeade pizza for Tyler on Friday and it was really good! Really liked the pesto flavoring rather than traditional red sauce. I had received some really good pesto for Christmas and used it for this!

Tomato and Pesto Pizza

What you need:
Frozen Pizza Crust
1 small can sliced black olives
1 bag shredded mozzarella cheese
1/2 cup pesto 
3 medium tomatoes

What to do: (preheat oven to 425 degrees)
1. Remove pizza crust and spread out on oven pan (I chose to use already cooked pizza crust this time (Boboli)
2. Spread 1/2 cup pesto sauce on crust
3. Slice tomatoes (thin) and place on sauce
4. Sprinkle pepper over tomatoes for added flavor
5. Sprinkle cheese on top (as much as you like!)
6. Add olives to the top!

7. Cook for 10-15 minutes or until cheese is melted!
8. Enjoy!

Garlic Ranch Chicken Pizza by Suburbs Mama

This recipe looks so good to make for a lazy Friday night in!! Check it out!

Garlic Ranch Chicken Pizza

What you need:

1 large pizza dough, uncooked (fresh, frozen, or whatever you like best)

3/4 c. home made ranch dressing (see recipe bellow)

2 cloves garlic, minced
3 c. Mozzarella cheese, shredded

1/2 c. turkey bacon, cooked and crumbled

1 Cup of chicken (cooked and cut into strips)

2 tomatoes, sliced

*Ranch Dressing: 1 packet TRADITIONAL Hidden Valley Ranch mix (not BUTTERMILK)
1 c. mayonnaise
1 c. buttermilk

What to do:

Whisk ranch mix and mayo together, slowly add buttermilk. When well blended, cover and refrigerate

Mix ranch dressing and crushed garlic together then spread evenly on the pizza dough.

Sprinkle a little cheese over the ranch dressing then add chicken and bacon. Sprinkle more of the cheese over that, add the tomatoes, then add the remaining cheese. Put in the oven at 350 degrees for about 20-25 minutes (or until crust is a nice golden-brown). Top with parsley

Mini Pizzas by Grand's Biscuits

I saw a commercial for these and knew we needed to try them, they are easy and fun and would be a great way to let kids get involved with dinner!

Grands Mini Pizzas

This is Tyler's pizza, I chose cheese, mushroom and bell pepper!

What you need:
-1 container of Grands Biscuits
- 1 jar of pizza sauce (we used regular pasta sauce that we had)
- Mozzarella Cheese (shredded)
- Toppings of your choice! (pepperoni, sausage, peppers, mushrooms, etc.)

What to do:
1. Flatten out biscuits into 6 inch rounds
2. Add as much sauce as desired to middle of biscuit
3. Add as much cheese as desired to middle of biscuit
4. Add toppings!
5. Bake at 350 degrees for about 12-15 minutes
6. Enjoy!!

What an easy way to have pizza!

Pizza Margherita by Martha Stewart

So good!

Pizza Margherita
Pizza Margherita

  • All-purpose flour, for rolling
  • 1 cup prepared tomato sauce
  • 8 ounces fresh mozzarella, thinly sliced
  • 1/4 cup extra-virgin olive oil
  • 24 fresh basil leaves, torn
  • Coarse sea salt

Directions

  1. Preheat a grill or grill pan.
  2. Divide dough into 4 equal pieces and shape each into a ball. Loosely cover with a kitchen towel or plastic wrap; let stand 15 minutes.
  3. Using a lightly floured rolling pin or your hands, stretch each ball into a 9- to 10-inch round.
  4. Place one round of dough directly on grill and cook until bottom is lightly browned and dry, about 2 minutes. Using tongs, gently turn dough and cook for 30 seconds more. Transfer to baking sheet, browned side down, and set aside. Repeat process with remaining dough.
  5. Divide sauce evenly between pizzas spreading to within 1/2 inch of the edges of the dough. Top with cheese.
  6. Working with 1 or 2 pizzas at a time, place on grill and cook until cheese is melted and bottom is golden brown and crisp, about 2 minutes. Repeat process with remaining pizzas. Transfer pizzas to a cutting board and drizzle with olive oil. Scatter basil leaves over each pizza and sprinkle with salt. Cut using a pizza wheel and serve immediately.

Pizza Cake by One Fine Cookie

Here is what you need:
For the Tomato Sauce,
-  3 ½ -4 pounds  fresh tomatoes (I used a mix of plum tomatoes and beefsteak tomatoes. You can also use 2 28 oz cans of whole, peeled tomatoes and cut down the cooking time)
- 1 ½ tablespoons of  good quality olive oil
2 cloves of garlic, minced
sea salt
freshly ground black pepper
onion, finely chopped
1 bay leaf
-fresh basil leaves
-red pepper flakes (only if you want a little hint of spice, leave out if you are a sissy)
* You can use a premade jar of sauce, if you must, but try making it fresh at least once. It is worth it.
Also, onion, basil, bay leaf and red pepper flakes are optional. You really only need tomatoes, garlic, salt, pepper, and olive oil for a basic tomato sauce.
For Pizza Dough,
-5 cups of bread flour
-2 teaspoons of sugar
¼ cup of olive oil
-2 ¼ cups of warm water
-2 packages of active dry yeast (in baking section of grocery store)
-1 tablespoon of sea (or kosher) salt
-all-purpose flour  (for rolling out the dough)
- corn meal (if you are using a baking sheet to cook the pizza on)
* Again, use a store-made dough, if you must. I do encourage to try making this dough at least once. It is fluffy and soft, without the grease or chewiness that other doughs may have. My friend Jen, who does not like pizza dough said she loved this.
For Pizza Toppings (“frosting” and “filling”),
any assortment of vegetables (I used onions, peppers, and mushrooms)
-cheese (I used 32 ounces of buffalo mozzarella, which is white and comes as a ball or roll, and then 1 ¼ pounds of grated mozzarella. The grated mozzarella is not as good quality as buffalo, but it melts better as a “frosting.” I bought the best quality that I could find and grated it myself. The kind that comes in a bag pre-grated is usually of very low quality and processed. If you do not like to grate cheese, a food processor usually comes with a slicing attachment that allows you to grate cheese fairly quickly.)
-fresh basil leaves
-pepperoni
-spicy italian sausage

OK, so this is A LOT of preparation, but maybe on a rainy Friday night I will attempt this one!

Thin Crust Pizza with Ricotta and Mushrooms


This would be a great recipe to make when you have extra mushrooms and onions laying around!


Thin Crust Pizza with Ricotta and Mushrooms


Ingredients

  • 2 teaspoons olive oil, plus more for baking sheets
  • 2 whole-wheat sandwich wraps (12-inch)
  • 2 ounces Asiago cheese, shredded (1 cup)
  • 2/3 cup part-skim ricotta
  • 1 package (10 ounces) white mushrooms, trimmed and thinly sliced
  • 1 small red onion, halved and thinly sliced
  • Coarse salt and ground pepper

Directions

  1. Preheat oven to 450 degrees, with racks in upper and lower thirds. Brush two rimmed baking sheets with oil, or for easy cleanup, line with parchment paper then brush with oil. Place one wrap on each sheet; brush with 1 teaspoon oil.
  2. Sprinkle wraps with Asiago, then dollop with ricotta. Sprinkle with mushrooms and onion; season with salt and pepper.
  3. Bake pizzas until crust is crisp and very brown all over, 20 to 25 minutes, rotating sheets from top to bottom and front to back twice during baking. Cut in half with a pizza cutter or knife; serve one half per person.

Saucy Pizza Skillet Dinner

I made this recipe last week for Tyler and it was a hit! Looks similar to some of the other dishes I have made, but a little different ingredients!

Saucy Pizza Skillet Dinner



Ingredients:
- 1 small box of lasagna dinner noodles 
- 1 package (6.4oz) dried spaghetti sauce mix
- 1 (4 oz) can of mushrooms (stems and pieces), undrained
- 1/2 c. chopped green sweet pepper
- 1/2 c. sliced (pitted) olives
- 1/2 c. shredded mozarella cheese (I used a lot more cheese!)

How to:
1. Break dinner noodles into bite size pieces and put into large skillet with seasoning, 3 cups water, mushrooms and sweet pepper.

2. Bring to a boil, stirring occasionally, reduce heat. Simmer for about 13 minutes or until pasta is tender. Uncover and cook for 2-3 min.

3. Sprinkle with olives and top with cheese! Remove from heat once cheese is melted and let stand for a couple minutes to cool.

West Coast Grilled Vegetable Pizza



We are making pizza tonight!! I am excited to try the fresh pizza dough!! Tyler loves to grill, so this is perfect for both of us! We shall see how it turns out! ;)

West Coast Grilled Vegetable Pizza


Ingredients

  • 3 tablespoons olive oil
  • All-purpose flour, for shaping dough
  • 1 pound store-bought pizza dough, fresh, or thawed if frozen
  • 2 plum tomatoes, thinly sliced crosswise
  • 2 scallions, white and green parts separated, thinly sliced
  • 1 log (5 ounces) soft goat cheese, crumbled
  • Coarse salt and ground pepper
  • 1 bag (5 ounces) baby spinach
  • 1 avocado, halved, pitted, peeled, and diced
  • 2 tablespoons red-wine vinegar

Directions

  1. Heat grill to medium. Brush a large rimless baking sheet (or an inverted rimmed sheet) with 1 tablespoon oil. On a lightly floured work surface, roll and stretch dough to two 8-inch ovals or rounds. Transfer to prepared sheet. Brush tops with 1 tablespoon oil.
  2. Transfer dough to grill. Cook, without turning over, until undersides are firm and begin to char, 2 to 3 minutes. Using tongs and a large spatula, place crusts on baking sheet, grilled side up.
  3. Scatter crusts with tomatoes, scallion whites, and cheese; season with salt and pepper, and slide back onto grill. Cook, rotating occasionally, until cooked through and cheese begins to melt, 3 to 5 minutes. Transfer to a cutting board.
  4. In a medium bowl, combine spinach, avocado, scallion greens, vinegar, and remaining tablespoon oil; season with salt and pepper, and toss to combine. Pile mixture onto pizzas; halve, and serve.
