Roasted Tomato Feta and Mushroom Stuffed Porkchops by Alicia

Made these the other night for dinner, they are simple to make and really good!


Roasted Tomato Feta and Mushroom Stuffed Porkchops

What you need:
- 2 thinly sliced porkchops (boneless)
- 1 cup mushrooms
- 1 shallot
-1 clove garlic
- Roasted Tomato Feta Cheese
- Salt and Pepper to taste

What to do:
1. Cook garlic (chopped) and shallot (chopped) with about 1 Tb. of olive oil on skillet until cooked through (soft)
1. Put raw chops in a large ziploc bag and pound meat with tenderizer until flattened out a bit
2. Once flattened, add handful of mushrooms and fets to center of meat. Add a pinch of cooked garlic and shallot.
3. secure both ends together and press toothpicks through one side of meat through the other side.



4. Line a glass baking dish with foil and place the chops inside.
5. Cook about 25-30 min (depending on thickness of meat and how many chops you have) (or until center reads 165 degrees... 175 degrees if you like it well done)


6. Let cool and enjoy! You can add salt and pepper to taste!

Pork Chops and Apples by allrecipes.com

I love the taste of apples and pork, so I made this recipe!

Pork Chops and Apples

What you need:
1/2 c. chopped onion
2 Tb. butter
6 pork chops
1 tsp. salt
1/8 tsp. pepper
3 medium apples- sliced
1 c. water
3 Tb. brown sugar
1/2 Tb. dry mustard 
1/4 tsp. ground cloves
cinnamon

What to do:
1. Saute the onion in butter until soft-- remove
2. Brown the chops in butter, sprinkle with salt and pepper
3. Put chops in baking dish, add onions, cover with apples
4. Add water, brown sugar, dry mustard and cinnamon
5. Bake for 1 hour at 375 degrees covered, 15 min uncovered

Garlic Lime Marinated Pork Chops by Skinny Taste

Garlic Lime Marinated Pork Chops


Ingredients: 
  • 4 (6 oz each) lean boneless pork chops
  • 4 cloves garlic, crushed
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp paprika
  • 1/2 lime, juice of
  • lime zest
  • salt and fresh pepper

Directions:
    Trim any fat off pork. In a large bowl season pork with garlic, cumin, chili powder, paprika, salt and pepper. Squeeze lime juice and some zest from the lime and let it marinade at least 20 minutes.

    Line broiler pan with foil for easy clean up. Place pork chops on the broiler pan and broil about 4-5 minutes on each side or until nicely browned.

    Pork Chops with Herb Stuffing

    Tyler and I try to eat pork atleast once a week or so, so I was looking for some recipes to spice it up a little! This is what I found from Martha Stewart.

    Pork Chops with Herb Stuffing




    Ingredients

    • 1 cup cubed (3/8 inch) rustic bread, without crusts
    • 1 tablespoon unsalted butter and 1/4 cup olive oil
    • 1/2 cup finely chopped onion, and 3/4 cup chopped celery
    • 1/4 cup plus one tablespoon mixed chopped parsley and thyme
    • 2 1/4 teaspoons ground coriander
    • 1/2 cup plus 3 tablespoons chicken stock
    • Coarse salt and freshly ground pepper
    • 4 bone-in pork chops (9 ounces each), cut horizontally to the bone
    • 2 garlic cloves, minced
    • 1/4 cup dry sherry

    Directions

    1. Preheat oven to 350 degrees. Toast bread cubes on a baking sheet until golden, about 7 minutes. Heat butter and 1 tablespoon oil in a 12-inch ovenproof skillet over medium heat. Cook onion, stirring, until soft, about 3 minutes. Add celery; cook 1 minute. Transfer to a bowl. Reserve skillet. Toss bread, herbs, 1/4 teaspoon coriander, and 3 tablespoons stock with onion mixture. Season with salt and pepper.
    2. Stuff chops. Using a fork, mix and mash garlic, 2 teaspoons coriander, 1/2 teaspoon salt, and 1 tablespoon oil; rub onto pork. Heat 2 tablespoons oil in skillet over medium-high heat. Cook pork until golden brown, 2 to 3 minutes; flip, and transfer skillet to oven. Cook until pork registers 155 degrees, about 15 minutes. Transfer to a plate; cover.
    3. Add sherry and 1/2 cup stock to skillet. Cook over medium-high heat, stirring, until reduced by half. Serve with pork

    Pork Chops with tomato, basil and mozzarella topping!

    If you haven't figured it out by now, I LOVE adding fresh ingredients to chicken, pork, salad, etc to add flavor... here is another recipe that is we liked!

    Pork Chops with tomato, basil and mozzarella topping!

    The pork chop is stuffed with stuffing from the meat deli at the grocery store, they come pre-made and are super yummy!!


    What you will need for topping:
    1 lb of cherry tomatoes (cut in halves)
    1 lb. of fresh mozzarella cheese (I chose Bocconcini) (cut into small squares)
    10 basil leaves (minced)

    Mix all together and add on top of pork!

    MMMMMM!!!
