Homemade Salsa Topping for Fish-- by Alicia

I like to have fresh toppings on my fish, especially salmon! I cut up a few things from the fridge and added to the top of cooked salmon, so good!

Salsa Topping for Salmon

What you need:
- 1/4 cup olive oil
- sliced up baby tomatoes 
- sliced up olives
- sliced up avocado
(can add chopped onion as well!)

I eyeball the amounts I want cut up, it depends on the number of fish fillets you are making! Add all sliced ingredients to a small mixing bowl and add a little olive oil (prob don't need 1/4 c. if only making one portion)
Mix together and add to top of fish! (We broil our salmon for a couple minutes on each side)

This recipe is also really tasty if you use a wood board to cook your salmon on the grill with. We buy flavored (smoked) fish boards at the store for a couple dollars, great flavor!

Salmon Rosemary Burgers

I wanted to try something different this week for dinner, so I came across these salmon burgers and thought they looked good!

Salmon Rosemary Burgers

Ingredients

  • 2 1/2 pounds king salmon fillet, skinned and de-boned
  • 1 cup dry bread crumbs
  • 1/2 cup minced red onion
  • 1 tablespoon Dijon mustard
  • 2 teaspoons prepared horseradish
  • 2 eggs, lightly beaten
  • 1 tablespoon minced fresh rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons olive oil

Directions

  1. Prepare the salmon by cutting into strips, cutting the strips crosswise, and chopping the fish until well minced. Be sure to remove any remaining bones.
  2. In a large bowl, mix the minced salmon with bread crumbs, red onion, Dijon mustard, horseradish, and eggs. Season with rosemary, salt, and pepper. Chill at least 30 minutes in the refrigerator.
  3. Preheat an outdoor grill for medium-high heat.
  4. Form the salmon mixture into 8 burger patties. Lightly coat each patty with olive oil.
  5. Place salmon patties on the grill, and cook 4 or 5 minutes on each side.

Grilled Salmon with Grapefruit and Orange Vinaigrette Dressing

This looks super interesting! Hope it's good! Seems like the fruit with Salmon would be good!

Grilled Salmon with Grapefruit and Orange Vinaigrette Dressing

Grilled Salmon and Grapefruit Salad with Blood Orange Vinaigrette Recipe

Ingredients
  • (6-ounce) salmon fillets (1 to 1 1/4 inches thick)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • large Vidalia or other sweet onion, cut into 1/2-inch-thick slices
  • Cooking spray
  • 8 cups mixed baby salad greens
  • (24-ounce) jar red grapefruit sections (such as Del Monte), drained

Preparation
  • 1. Prepare grill.
  • 2. Sprinkle fillets with salt and pepper. Coat fillets and onion slices with cooking spray. Place fish and onion on grill rack coated with cooking spray. Cover and grill 5 minutes on each side or until fish flakes easily when tested with a fork and onion is tender.
  • 3. Cut onion into bite-sized chunks; break fish into chunks. Place 2 cups salad greens on each of 4 serving plates; arrange grapefruit sections, onion, and fish evenly over greens on each plate. Drizzle Blood Orange Vinaigrette evenly over salads.

Broiled Salmon with Avocado, Mango Salsa

I found this recipe at allrecipes.com and tried it with Tyler last night for dinner, it was so good! We both loved the mix of salty and sweet...

Broiled Salmon with Avocado, Mango Salsa

This is how I made it:
Ingredients:
-2 salmon fillets (for 2 people)
- 1 mango
- 1 avocado
- 1/4 c. red onion
- 1 Tbs olive oil
- 2 Tbs. lemon juice


Herb-Crusted Salmon with Spinach Salad

This recipe from Martha Stewart looks so good, and it was on the light and healthy menu, even better! I am excited to try this since we eat a lot of salmon--

Herb-Crusted Salmon with Spinach Salad




Ingredients

  • 3 slices white sandwich bread
  • 1 cup fresh parsley
  • 2 tablespoons olive oil
  • Coarse salt and ground pepper
  • 4 skinless salmon fillets, (6 ounces each)
  • 2 tablespoons Dijon mustard
  • 3 tablespoons fresh lemon juice
  • 5 ounces baby spinach
  • 1/2 medium red onion, thinly sliced

Directions

  1. Preheat oven to 450 degrees. Line a baking sheet with aluminum foil; set aside. In a food processor, combine bread, parsley, and 1 tablespoon oil; season with salt and pepper. Pulse until coarse crumbs form.
  2. Place salmon on prepared sheet; season with salt and pepper. Spread top of fillets with Dijon; top with crumb mixture, pressing gently to adhere. Roast until salmon is opaque throughout, 11 to 13 minutes.
  3. Meanwhile, in a large bowl, combine lemon juice and remaining oil; season with salt and pepper. Add spinach and onion; toss to combine. Serve salmon with spinach salad.

Tyler's New Fish Board

Tyler loves the idea of smoked fish on a wood board, so he bought one the other day (cedar) and decided to try it out! It was fun to make and turned out great! He also made a homemade rub for the fish and I made a homemade Italian salad dressing!! Here are the pics from the process...

Salmon with Honey-Coriander Glaze

One more salmon recipe!!


Salmon with Honey-Coriander Glaze



What you need:

  • 1 tablespoon whole coriander seeds




  • 1/4 cup honey




  • 5 tablespoons soy sauce




  • 2 teaspoons fresh lemon juice




  • 4 salmon fillets (5 ounces each), skinned




  • 2 teaspoons vegetable oil





  • What to do:


  • Toast the coriander seeds in a dry, large nonstick skillet over medium- high heat, stirring constantly, until golden, about 3 minutes. Remove from heat; let cool. Grind seeds in a spice grinder or crush with a mortar and pestle until coarsely ground; reserve skillet.




  • Make glaze: Stir together crushed coriander seeds, honey, soy sauce, and lemon juice in a small bowl until combined.




  • Lightly brush the top of each salmon fillet with glaze; reserve remainder. Heat oil in the nonstick skillet over medium heat until hot but not smoking. Cook salmon fillets, glazed sides down, 1 minute; reduce heat to medium-low, and cook 2 minutes more. Turn fillets over, and cook 3 minutes for medium-rare (salmon will be slightly pink in the middle), or longer if desired. Transfer to a plate; loosely cover with foil to keep warm.




  • Pour remaining glaze into skillet; bring to a boil over medium heat. Cook until glaze has thickened to the consistency of syrup, about 1 minute. Serve salmon with glaze on the side.

    Salmon Pasta

    So excited to make this one since I love salmon and I love pasta!

    Salmon Pasta



    What you need:

  • 1 tablespoon fennel seeds




  • 1/4 cup minced fresh parsley




  • 1 tablespoon light-brown sugar




  • Salt and pepper




  • 1 one-pound salmon fillet with skin (about 1 inch thick)




  • 1 pound corkscrew or other short pasta




  • 10 ounces spinach, stems trimmed and leaves washed well




  • 1/2 cup sour cream




  • 2 to 3 tablespoons fresh lemon juice




  • What to do:

  • Heat the broiler. Put fennel seeds in a small, self-sealing plastic bag, and crush with a rolling pin. Add parsley, brown sugar, 3/4 teaspoon salt, and 1 teaspoon pepper to the bag, and shake to mix.




  • Press the mixture onto the skinless side of the salmon. Broil salmon, skin side down, until it is no longer red in the center, about 8 minutes.




  • Flake the fish with a fork. Meanwhile, in a large pot of boiling salted water, cook pasta according to package instructions until al dente, about 13 minutes. Reserve about 1/2 cup cooking water, and drain pasta. Return it to the warm pot, add spinach, and toss.




  • In a bowl, mix together sour cream, lemon juice to taste, 1/2 teaspoon salt, and 2 tablespoons pasta water.




  • Put pasta on plates, top with salmon, and drizzle with the sour-cream mixture. Or simply toss pasta and spinach in the pot with the salmon and the sour-cream mixture, adding pasta water as needed, and serve.

    Sauce for Salmon

    I wanted to "spice up" our salmon last night, so I made a sauce that I researched bits and pieces of and added some of my own ingredients... turned out good!!

    Only 5 simple ingredients!!

    Combine:
    - 1 tsp dill weed
    - 1 tsp pepper
    -1 tsp salt
    -1/4 c Worcestershire Sauce
    -1/4 c. lime juice

    Stir and brush onto your salmon!! We really liked it!

    Salmon Caesar Salad with Lemon

    I found this recipe from a magazine a long time ago and it is one of Tyler and my favorites.... so simple, and so good!

    Salmon Caesar Salad with Lemon



    What you need:

    - 2 fillets of Salmon
    - Caesar Salad mix from the store
    - 1 green pepper
    - 1 cucumber
    - salt/pepper
    - 1 lemon

    How to:

    1. Broil the salmon in the oven for about 20 min. or until cooked through
    2. Pour salad into large salad bowl and mix in croutons, cheese, pepper and cucumber (don't add dressing until salmon is ready so the salad doesn't get soggy!
    3. Cut the salmon into chunks, add to salad, add dressing and mix!!
    4. Squeeze lemon on top and enjoy!

    So good! If you like salmon, you will love the flavor in this salad!

    Lime Salmon with French Style Green Beans

    Haven't made too many new recipes the last couple days, but here is one I tried last night and it was good!

    Lime Salmon with French Style Green Beans


    So it might not look too appetizing, but it was!!

    Ingredients:
    - 3 large pieces of salmon
    - 1/8 tsp.salt
    -1/8 tsp. pepper
    -1/8 tsp. lime zest (shredded peel)
    - 2 tbs. cooking oil
    - 1 to 2 tbs. sesame seed
    - 1 can of french style green beans (drained)

    How to:

    1. boil green beans on stove for a about 15 minutes while you are mixing the dressing together.
    2. In a small bowl, add salt, pepper, lime zest, oil and sesame seed... stir together
    3. In a glass baking dish, cover the bottom with foil and lay salmon in it
    4. Brush dressing onto salmon, add some cut up lime slices on top
    5. Drain beans and add around the salmon
    6. Cook at about 380 degrees for around 20-25 minutes or until fish is cooked through

    The flavor is very light, but a quick summer fish dish to put together!!

    Broiled Salmon with Spinach and Feta

    Here is the dish I am going to make for us tonight! Tyler and I both love salmon, so I think this recipe will be great!




    Broiled Salmon with Spinach and Feta Cheese


    What you need:
    • 4 skinless salmon fillets (6 ounces each)
    • Coarse salt and ground pepper
    • 1 tablespoon olive oil
    • 2 bags (5 ounces each) baby spinach
    • 1/2 cup feta, crumbled (2 ounces)
    • 1/3 cup pine nuts
    • 2 teaspoons fresh lemon juice

    Directions

    1. Heat broiler, with rack set 4 inches from heat. Place salmon on a rimmed baking sheet; season with salt and pepper. Broil until opaque throughout, 5 to 7 minutes.
    2. Meanwhile, in a large skillet, heat oil over medium. Add as much spinach as will fit; season with salt and pepper. Cook, tossing spinach and adding more to skillet as space becomes available, until tender, about 2 minutes. Remove from heat; drain off excess liquid. Stir in feta, pine nuts, and lemon juice. Serve salmon with spinach saute.
